  1. This may be out of your area, since you live inland, but worth a try. I live by the ocean and have a large salmon I would like to can. Have canned the smoked salmon my husband did. Is canning fresh, uncooked salmon the same? The recipes in the Ball book call for brining it first. But the tuna recipe calls for cooking it first and I always just can it, seal it and process it! Thought maybe could do the same thing with the salmon. What do you think?

    1. Probably too late for processing your salmon, but fish should be processed with a pressure cooker. Much easier to clean then and vaccum pack them then freeze them. I have used them after 6 months and they were still like fresh. Vacuum machine at WalMart works fine.

    2. Well I don't see why not. I was just talking to my father yesterday about smoking some salmon for me so I can can it. Have you ever tried that?
